Christmas Wine

We know its hard to think about Christmas when it is 30C outside. Many of our Red Wines do require time in the bottle to age before reaching their full potential. That’s why we are reminding you that now is the time to start that favorite red wine so that it will be really good about Christmas time. Cocktail of the month

Now that we are gathering with friends and family again why not try serving a wine punch for everyone to enjoy!!


Red or White Wine Punch

1 bottle Vintner’s Cellar Red or White Wine

2 cups Cranberry Juice (Red Wine) or White Cranberry Juice (White Wine)

1 cup Orange Juice

500 ml Ginger Beer (or strong ginger soda)

3 teaspoons Vanilla Extract

Add Possible Garnishes (fresh cranberries, orange slices, apple slices, fresh mint, cinnamon sticks)

Mix all ingredients and stir – garnish as you like and serve over ice. If not serving immediately mix wine, juices and vanilla together and refrigerate. Add ginger beer right before serving.

How to made your own wine marinade:

A wine marinade is a mixture of wine, herbs, spices, oils, and any other ingredient that will bring flavour to your recipe. The options are endless when creating a marinade for your meat, fish, or tofu.


When making your own marinade it is important to include ingredients from four categories. The acid category contains your wine and other things like lemon, vinegar, mustards, honey, and a large variety of sauces. Fat includes your oils. Most marinade recipes use either butter or olive oil, but you can include any oil you prefer. Spices are a huge component in marinades & are what amps up the flavours. Try spices like cumin, allspice, coriander, black pepper, or paprika and see how each spice pairs with the wine you’re using. The last category is herbs. Rosemary, thyme, parsley, sage or a bay leaf are great ways to add aromas to your wine marinade.

What are the best wines for marinating?


There are no rules when it comes to marinades — or wine! Simply use your judgement and what you feel will bring out the best flavours in your dish. An easy guide is to use red wine for red meat, white wine or rosé for chicken, fish or tofu.


A Simple Wine Marinade Recipe

This marinade recipe can be used for all dishes, and with your wine of choice. Feel free to add more flavours as you see fit.

Ingredients for an Easy Wine Marinade:

1 cup wine of your choice

2 tbsp olive oil

1 tbsp soy sauce

1 onion (thinly sliced)

1 garlic clove (crushed)

1/2 tsp ginger

1 bay leaf

orange zest (optional)


Mix the marinade in a large Ziploc bag and place your meat, fish, tofu, etc. in the bag with the marinade.

Refrigerate for a minimum of 30 minutes (the longer it marinades the more flavour you will have)

Turn the protein over halfway into the marinating time to allow the flavours to be absorbed evenly.

Save leftover marinade liquid. Cook it down in a saucepan to thicken. Spoon sauce over your dish and enjoy.


Barrel Club

The next Barrel Club is available to buy into. This time we are creating our own Vintner’s Cellar Cochrane blend – the Cochrane Big Hill Italian Blend. We are excited to be blending some amazing Italian grapes together to make our very own blend.

This barrel is a blend of Sangiovese, Montepulciano, Barbera, Cabernet Franc and Alicante. This Italian blend will bring all the great tasters of Italian wine together in one bottle! This deep red wine will have a good structure of tannin and acid. Rich flavours of black currant & berries with soft peppery tones and an aroma of oak will greet you when you pour yourself a glass. The velvety texture of the wine will excite your palate and the finish will be clean and pleasant. We have only advertised this latest barrel in the Cellar and have already sold 4 spots! Don't hesitate as this is selling out fast!!

August & September Long Weekend – Closed

We will continue to take mini breaks around long weekends to recharge & work on product research and development (we will be drinking wine and relaxing!!) The Cellar will be closed July 30 – August 2, 2021 & September 3-6, 2021.
